Justin received his master’s degree in beer and brewing science from UC Davis in 2013. After passing the IDB and completing his thesis on the stability of beer foams and specialty malts, Justin began his brewing career at the Russian River Brewing Company in Santa Rosa, eventually becoming the lead brewer. While at Russian River, Justin gained an appreciation for the intricacies of the multi-stage fermentation of sour beer. After leaving Russian River, Justin went on to establish a quality assurance program at Half Acre Beer Company in Chicago. During his time at Half Acre, Justin became an integral member of Half Acre’s research and development team and optimized their sour beer and barrel aging methods. Currently Justin is the Product Manager at Pilot R&D, a culinary innovation and product development company where he develops recipes for a wide range of food products.
